Keep Mayan These Chia Seed Crackers!

Untitled
Keep Mayan These Crackers

I’ve been getting silly with my foods since I’m on this strict Candida Diet. These chia seed crackers are a staple part of my diet these days and a food transport device for avocado spread and coconut butter. Most importantly, they are delicious on their own!

These delicious crackers wouldn’t be possible without Oh She Glows doing the heavy lifting. I just modified her Endurance Crackers recipe to my tastes.

The first batch I made was limited to ground chia seeds, chia seeds, and flax seeds because I was being very careful about new foods in my diet. These crackers worked, but were more just transport devices and not really tasty. Still, if you’re in the very beginning stages of a super strict candida diet, they may save your life! I felt much more energetic after noshing on these slabs.

Great with Avocados!

Super Strict Aztec Crackers:

These are for those who are just starting a Candida Diet and want to eat as few ingredients as possible. As I said above, they’re not super delicious, but they do give you energy and are good for spreading avocado on!

Makes 12 large crackers | Baking time: 1 hour | Prep time: 5 minutes

Ingredients:

  • 1/2 cup chia seeds
  • 1/2 cup flax seeds
  • 1/4 cup ground chia seeds
  • scant 3/4 cup water
  • 1 large garlic clove, finely minced
  • 1 tsp minced fresh white onion
  • 1/2 tsp coarse sea salt
  • 1/4 tsp turmeric

Directions:

  1. Preheat the oven to 325F and line a large baking sheet with parchment paper.
  2. In a large bowl, mix the seeds together. Add garlic, onion, and spices. Stir with a spatula for a minute or two until the mix thickens and all ingredients are combined.
  3. Turn the mixture out onto your lined baking sheet. With the flat spatula, spread the mixture out evenly until it’s about 1/4 thick.
  4. Bake at 325F for 30 minutes. Remove from oven, using a pizza slicer or very carefully with a Chefs knife, slice the crackers into a 12 piece pie cut. Carefully flip onto other side with a large spatula. Bake for another 25 minutes, then check to see if they need additional time. The bottoms will be lightly golden in colour. Allow to cool completely on the pan.

These are better than any Mary’s Gone Crackers or Flackers I’ve bought at the store. I have to keep these away from my boyfriend who is NOT on a diet.

So many seeds!

Mince up your garlic & onion. Or, if you have a coarse Microplane, use that, because it really is much faster!

Add spices, garlic, onions, and water. Mix well until it gets a gel like consistency.

Turn out the mixture onto a lined baking sheet and start spreading it out

It should look like this. You can even go thinner and stretch it all the way to the corners.

After cooking for 30 minutes, this is what it will look like.

Using a pizza cutter or a good old fashioned chef’s knife, carefully slice the crackers. Go nuts with whatever shape you want.

Don’t forget to flip them and cook for another 25-30 minutes!
